Raw beetroot salad with lemon thyme

Raw beetroot is something I’ve not experimented with before, mostly since the beetroot I can get my hands on easily is the pre-cooked kind. I really liked this salad – it makes a delicious and healthy starter or side. I chose lemon thyme, as it kind of had the right balance of fresh and autumnal for my mood, but I imagine dill, tarragon or mint would be nice too. Replace the maple syrup with honey if it’s too sweet for you.

You will need:

Per person

1 beetroot, peeled
4 sprigs lemon thyme, leaves picked
1 tbspn rapeseed oil
1 tbson white balsamic vinegar
1/2 clove of crushed garlic
1 tspn maple syrup
Juice of 1/2 lemon
Salt, pepper
Creme fraiche, to serve

Method:

1 – Use a mandolin to shave the beetroot into very fine slices
2 – Place the beetroot into a bowl with the oil, vinegar, lemon juice, garlic, maple syrup, half the thyme and some seasoning
3 – Toss well and arrange the beetroot slices carefully on a serving plate. Scatter over the extra leaves, the remaining dressing in the bowl and extra black pepper
4 – Serve with a few tspns of creme fraiche
